FOODFROLICO: Anyone for Pavlova? One of Margaret Fulton’s essential recipes!

THE ALMIGHTY PAVLOVA. Below: HAVE ANY TYPE OF COFFEE THAT SUITS THE OCCASION!

“MARGARET FULTON MAY HAVE GONE, WRITES JILL DUPLEIX OF GOOD FOOD, BUT HER RECIPES LIVE ON”. MARGARET BECAME A HOUSE-HOLD NAME IN KITCHENS THROUGHOUT AUSTRALIA.

MARGARET SETTLED IN NORTHERN NSW ON ARRIVAL IN AUSTRALIA. IN THE LATE 40S, SHE WAS A COOKING TEACHER AT AUSTRALIAN GAS LIGHT COMPANY. THEN CAME: WOMAN IN 1954, NOW DEFUNCT, WHERE SHE WROTE UNDER THE NAME OF “ANN MAXWELL”; SHE WENT TO JWT ADVERTISING IN 1955; SHE JOINED WOMAN DAY’S 1960; AFTER 17 YEARS, SHE JOINED RUPERT MURDOCH’S NEW IDEA MAGAZINE.

Pavlova is a rich sweet dish of meringue and marshmallow topped with whipped cream and fruit, which, we’re told, originated in NZ. It was name after the celebrated Russian ballerina, Anna Pavlova, who twice toured NZ in the 1920s.

INGREDIENTS

4 EGG WHITES. A PINCH OF SALT. 1 ½ CUPS OF

CASTOR SUGAR. 1 ½ TSP VINEGAR. 1 TSP VANILLA.

300 ML CREAM WHIPPED. PULP OF 3 PASSIONFRUIT.

OR 1 CUP SLICED STRAWBERRIES.

METHOD

STEP 1. PREHEAT OVEN TO 200-210C. PLACE A PIECE OF BAKING PAPER ON A BAKING TRAY AND MARK A 20-CENTIMETRE CIRCLE (THE PAVLOVA WILL SPREAD A LITTLE).

STEP 2. BEAT THE EGG WHITES AND SALT IN AN ELECTRIC MIXER UNTIL THEY STAND IN STIFF PEAKS. SIFT THE SUGAR AND GRADUALLY SPRINKLE IN ONE TABLESPOON AT A TIME, BEATING AT FULL SPEED ONLY UNTIL ALL SUGAR HAS BEEN ADDED.

STEP 3. LASTLY, FOLD IN THE VINEGAR AND VANILLA. SPOON LARGE DOLLOPS INSIDE THE CIRCLE ON THE ON BAKING SHEET AND SMOOTH OVER THE TOP LIGHTLY. PLACE IN THE OVEN (REDUCING THE TEMPERATURE TO 150C) FOR ONE HOUR. TURN OFF THE HEAT AND LEAVE THE PAVLOVA IN THE OVEN UNTIL COLD. IF USING A GAS OVEN, BAKE AT 150C FOR ONE HOUR, REDUCE HEAT TO 120C FOR A FUTHER 30 MINUTES AND THEN TURN OVEN OFF. LEAVE THE PAVLOVA IN OVEN UNTIL COMPLETELY COOLED. 

STEP 4. WHEN PAVLOVA IS COOLED, SLIDE ONTO LARGE FLAT CAKE PLATE. REMOVE BAKING PAPER. DON’T WORRY IF THE PAVLOVA COLLAPSES SLIGHTLY; ALSO EXPECT CRACKS ON THE SURFACE. WHIP THE CREAM UNTIL STIFF AND SPOON OVER THE TOP OF PAVLOVA … WITH PASSIONFRUIT PULP OR STRAWBERRIES.

SERVES 8-10.

Out of the blue, with no warning at all, Christchurch was struck by a 6.3 magnitude earthquake at lunchtime on Wednesday, February 22, 2011, that virtually left it a broken city.

Seventy-five people died, and many injured. Officials believe that up to 300 people were feared trapped in buildings when the earthquake hit.

One NZ newspaper said, “the city is a war zone.”

But deep down, we know that Christchurch will rise from the ashes. People who visited this city described it as “England all over.”

What was Christchurch really like? Over the 100 years travel writers have attempted to crystallise the impression Christchurch had upon them in a few words: none did it more poignantly than Mark Twain.

His description has a soothing resonance about it. He unerringly honed-in on the Englishness of the city: the fact, that there is a ‘winding’ river named the Avon and has its punts and canoes flowing in this excellent city -- “as it always has”.

There the impressive and stately weeping willows along its banks continued “the line of a great ancestor.”
He added: “These trees were grown from sprouts of the willow that sheltered Napoleon’s grave in St Helena.” That’s the stuff that makes visitors want to walk over hot coals to experience.

Christchurch, named after Christ Church College at the University of Oxford, England, was a planned settlement founded by the English upper class circa 1850.

The impressive neo-gothic Anglican Cathedral, although boarded up, is located at the heart of Cathedral Square, which is the hub of tourism, shopping and public transport.

Now, after a long journey on this road to recovery, Christchurch is go, go, go!

The work to recover this Garden City has been a restorative dream. It’s been guts and rejuvenation joining hands.

Famous Women: Louisa Lawson – It is one step at a time!

When son Henry Lawson put pen to paper, Louisa was a well-known figure in the social platform before that event took place.

In 1848, near Mudgee, Louisa Albury was born. And, as she got older, during her schooldays, she gave evidence of literary interest and ambition that would take her far in the social platform. A first generation Australian of English parents, she spent her life in a small back water country town.

At 18, she became the wife of Peter Lawson at Eurunderee in 1865.

Unfortunately, there was no provision to any outlets, and this led to the frustrations with which her life was beset. She longed for escape into the world of action the cities seemed to promise, but this did not eventuate; in the main, it was the cause of the bitter quarrels between herself and her husband.

The young Henry, torn between loyalties to his mother and father, was never able to forget this as a horrendous period of torment and worry.

WOMEN’S SUFFRAGE

In 1883, Louisa’s marriage came to an end. She settled in Sydney with her children and opened a boarding house before entering journalism. She quickly threw herself into the political maelstrom of the next ten years.

In 1887, she bought a newspaper called the Republican. In was here that she coached Henry in his earliest writing. She edited and published Dawn, under the pseudonym “Dora Falconer’, and she devoted the first journal to the cause of Women’s Rights in Australia.’

She got behind women’s suffrage and saw women get the vote in all States between 1984 and 1908.
Until the early 1900s, she was the driving force behind her son’s various literary activities; and in his success she seemed to have vicariously realised some of her own ambitions. In 1905, she published The Lonely Crossing, a book of her verses.

She died in 1920.

THE STARS, OF COURSE, WERE GARRY PANKHURST, WHO PLAYED SONNY AND ED DEVEREAUX, THE PARK’S HEAD RANGER.

THERE WAS NO SHORTAGE OF MEGA NAMES WHO WERE PREPARED TO APPEAR WITH MARSUPIAL STAR, SKIPPY. OVER THE NEXT FEW YEARS, THE SHOW ATTRACTED SOME IMPORTANT STARS AMONG WHOM WERE JACK THOMPSON, BILL HUNTER, JOHN LAWS AND SCREEN LEGEND CHIPS RAFFERTY.
